CILANTRO

Bright green leaves that look much like Italian Parsley, but with a pungent, bright, lemony, and a little peppery. When cooked, the flavour diminishes considerably.

• Uses: an essential herb in many Mexican, Middle Eastern, Indian, and Asian recipes.
